Abstract

The Better Process Control School addresses the United States regulatory requirement for thermally processed low acid and acidified foods in close containers. The project is targeted to the Thai food processors and government regulatory personnel. Focus of this course will be directed to the training of food process operational supervisors who have the responsibilities for retort operations and container closure inspections. Emphasis for this school is to educate /inform plant supervisors of proper methods of handling and thermally processing the products according to the requirements and regulations imposed by the US-FDA, which is the major market of Thai canned food products.. The school will follow the established format and protocol adopted for the FDA approved BPCSs delivered in the U.S. by the universities involved. It is expected that after the completion of this project, KMUTT will become the certifying institution and be approved by US-FDA to conduct the BPCS in Thailand. In a broader perspective, one can expect an improvement in the Thai food product quality and reduction of detention incidences especially for LACF and AF targeted for export to United States market as well as other countries, and the enhancement of the Thai agro-industry competitiveness.
In this project, KMUTT in cooperation with Purdue University, US-FDA and Thai-FDA will start up the BPCS in Thailand. During the school delivery, Purdue University will provide KMUTT with the methods of managing and conducting the school for the future BPCS type-training program. The main objective of the cooperation is to support KMUTT to eventually resume the responsibility for the management of BPCS and provide source for certification. The future BPCS in Thailand will be conducted in Thai language and the training material will be in Thai for the purpose of providing and distributing the knowledge to personnel working in the food industry throughout Thailand.

Objectives

The main objective of this project is to successfully assist the acidified and low-acid canned food (LACF) industry in Thailand to achieve international food safety and public health standards for processed foods through technical training programs. The program will emphatically inform Thai food processors of the United States regulatory requirements for acidified and LACF in order to facilitate importing into the United States. Thus will help strengthening the Thai agro-industry's competitiveness and improving the Thai food-product quality and the sanitary handling of thermally processed foods.
